Disgusting? No, just deviating from internalized norms. Understanding consumer skepticism toward sustainable food alternatives

In recent years, edible insects, lab-grown meat, and vertically farmed produce have been praised as potential sustainable food alternatives to the increasingly unsustainable Western diet. Although these offer considerable benefits, consumers typically reject them without much consideration. When prompted explain their rejection, often report specific concerns regarding foods. Edible for instance, are argued carry “diseases,” meat is seen “unhealthy,” perceived be “less natural.” Addressing self-reported has, however, proven insufficient in fully overcoming consumers’ rejection. The results of three empirical studies presented this manuscript a new explanation why. Specifically, we argue that may not per se convey root cause Instead, people also such result an underlying problem: elicit disgust because they deviate from what internalized normal food, causing intuitively them.
